cleaning the dining room/restaurant
I'm writing an article (for a restaurant trade magazine) on the importance of not overlooking the dining area of a restaurant with cleaning as well as whether you do it yourself or hire a cleaning service -- what tasks must be done daily, weekly, etc.
I've come to see that the cleanliness of the dining area is more a customer service task than a health department task. Does that seem like a valid notion?
I'd appreciate any input or insights.
