Mushrooms can be very good for us, and who doesn't like a hot, soothing bowl of soup?
Did you know that all edible mushrooms contain varying degrees of protein and fibre? Mushrooms contain B vitamins as well as a powerful antioxidant called selenium, which helps support the immune system. In addition, white button mushrooms are one of the few non-animal sources of vitamin D. Currently, different varieties of mushrooms are being researched due to their different medicinal properties. In fact, some varieties of mushrooms have been shown to have potential in fighting against cancer by protecting cells against DNA damage as well as inhibiting tumour formation. Evidence also shows mushrooms may be beneficial in the treatment of diseases such as Alzheimer's
Since mushroom soup is sounding better and better, here's an easy mushroom soup recipe:
Easy, Healthy Mushroom Soup Recipe
You'll need:
- 1 lb. fresh mushrooms
- 2 medium onions
- 1 stick butter
- 2 cans chicken broth
- 2 c. half and half or milk
- salt and pepper to taste
Directions:
- Saute onions and mushrooms in butter
- Add chicken broth and bring to a boil
- Add half and half, salt and pepper
- Cover and simmer 20 to 30 minutes
