Ann Arbor, MI – February 11, 2010 – How do entrepreneurs combine a lineage of Italian cuisine with today's market? Find your niche. Silvio Medoro along with partner Emidio Tomassi found their niche in the organic market. Medoro commented, "This was a natural fit for me. I was trained to always use the freshest ingredients possible." Medoro served as an apprentice in his Father's bakery in Italy's Abruzzo region, now he experiences the American dream.

Nearly five years after opening, the pair see the need and opportunity to expand. "Our sales have been strong even in the bad economy", stated Medoro. When the space next door became available Silvio's decided to proceed with their expansion designs. Medoro adds, "We're highly motivated to becoming a higher class ambience, deserving of our class of pizza. We're hoping the expansion will bring new customers, and it is inspiration for different menu items." The expansion doubles the seating capacity of the restaurant and adds a full wait-staff. These additional services create 15 new jobs for the area. The extension to the restaurant will be formally unveiled to the public in mid-February.

A bar / lounge area, featuring a regular music night with local talent, will be incorporated in the design. Medoro incorporates many such principles to fuel the local economy. "We will serve local beers and wines, organic if possible. Good food deserves good drink, "exclaims Medoro. The sustainability practices of Silvio's are seen in their dedication to serving healthy foods and the community. The business participates in Think Local First, the State Street Area Association, Ann Arbor Green Fair and the Botanical Gardens Earth Day Fair.

Medoro and Tomassi stick close to their roots in all their undertakings. Tomassi, who is also a native of Italy's Abruzzo region carried out most of the renovations himself with local artist / store manager JesRose overseeing the décor of the restaurant. Medoro's immediate family is immersed in the restaurant, from the kitchen to the front of the house. The feel of the family business carries on to the diner; "We happen to know most of our current customers by name," states Medoro.
